Vibrant Pasta Primavera

Pasta Primavera is packed with lots of different vegetables and a light creamy sauce that coats the pasta. It’s so easy to make, so colorful and delicious.

Ingredients:

  • Pasta (fettuccine, spaghetti, or any preferred type)
  • Vegetables:
    • Asparagus
    • Zucchini
    • Yellow squash
    • Frozen peas
  • Olive oil
  • Onion and garlic for the sauce
  • Heavy cream
  • Parmesan cheese
  • Fresh parsley
  • Salt and ground black pepper
  • Optional: Lemon juice

Cooking Method:

  1. Preheat and Prepare: Preheat your Purely rimmed baking sheet in the oven at 425 degrees Fahrenheit. This method ensures a quick and perfect roast for your veggies.
  2. Boil Pasta: While the oven preheats, bring a pot of salted water to a boil. Cook the pasta according to package instructions. Before draining, save about 1 cup of pasta water.
  3. Prep Veggies: Snap off the tough ends of the asparagus, then toss them with a tablespoon of olive oil, salt, and pepper. Similarly, prepare the zucchini and yellow squash by slicing and seasoning them with olive oil, salt, and pepper.
  4. Roast Veggies: Carefully place the seasoned asparagus, zucchini, and yellow squash onto the preheated Purely baking sheet. Roast for about 10 minutes until tender.
  5. Make the Sauce: While the veggies roast and the pasta cooks, in a Purely skillet, sauté onion and garlic until tender. Pour in the heavy cream, bring it to a boil, then reduce heat to simmer and cook until slightly thickened. Add Parmesan cheese, whisk to combine, and set aside.
  6. Combine Ingredients: Once the veggies are roasted and the pasta is cooked, cut the asparagus into smaller pieces. Gently toss the pasta, roasted veggies, sauce, frozen peas, and parsley together in a large Purely mixing bowl. If desired, add fresh lemon juice for brightness.
  7. Adjust Consistency: Incorporate some of the reserved pasta water to loosen the sauce, as needed.
  8. Serve: Garnish each serving of Purely-cooked veggie pasta primavera with extra parsley and Parmesan cheese.
