Grilled Zucchini and Mushrooms

Grilled Zucchini and Mushrooms are a great side dish to make, especially if you’re already grilling some other things. They are plump, scrumptious and perfectly charred.

Ingredients:

  • Zucchini:
    • 4 medium zucchinis
    • 2 tablespoons olive oil
    • Salt and ground black pepper to taste
    • 2–4 cloves garlic, minced
    • 1 teaspoon dry herbs (Trader Joe’s Onion Salt recommended)
    • 1 tablespoon fresh parsley, minced
  • Mushrooms:
    • 2 lbs mushrooms (white or baby bella)
    • 1/2 cup olive oil
    • 2 tablespoons red wine vinegar
    • 3–5 cloves garlic, minced
    • 1 tablespoon fresh herbs (parsley, thyme, rosemary, chives, etc.)
    • Salt, pepper, and dry herbs to taste

Cooking Method:

  1. Prepare the Grill: Preheat your Purely grill and clean the grill grates. Use oiled paper towels to rub the grates for easy grilling.
  2. Prep Zucchini: Cut zucchinis in half horizontally, then make shallow diagonal slices on the surface. Drizzle with olive oil, season with minced garlic, salt, pepper, parsley, and dry herbs.
  3. Prep Mushrooms: In a large bowl, place cleaned mushrooms. Create a vinaigrette using olive oil, garlic, parsley, red wine vinegar, reserving a few tablespoons. Pour the remaining vinaigrette over the mushrooms, season with salt, pepper, and dry herbs, then mix to combine.
  4. Grill Preparation: Thread the marinated mushrooms onto skewers. Place the mushroom kabobs and zucchini halves onto the preheated Purely grill, starting with the zucchini skin-side down.
  5. Grilling Process: Grill until both the zucchinis and mushrooms achieve a golden brown color. Allow the mushrooms to get a bit more color and char by leaving them on the grill a little longer than the zucchinis.
  6. Final Touches: Cut the grilled zucchinis into 1 1/2 inch pieces. Remove the mushrooms from the skewers and toss them with the reserved vinaigrette, adding gradually and tasting as needed. Garnish with additional fresh herbs before serving.
  7. Serving Options: Serve the grilled zucchini and mushrooms separately or combine them as desired.
