It\u2019s so easy to make, so colorful and delicious.<br \/>\n<em><br \/>\nIngredients:<\/em><\/p>\n<ul>\n<li>Pasta (fettuccine, spaghetti, or any preferred type)<\/li>\n<li>Vegetables:\n<ul>\n<li>Asparagus<\/li>\n<li>Zucchini<\/li>\n<li>Yellow squash<\/li>\n<li>Frozen peas<\/li>\n<\/ul>\n<\/li>\n<li>Olive oil<\/li>\n<li>Onion and garlic for the sauce<\/li>\n<li>Heavy cream<\/li>\n<li>Parmesan cheese<\/li>\n<li>Fresh parsley<\/li>\n<li>Salt and ground black pepper<\/li>\n<li>Optional: Lemon juice<\/li>\n<\/ul>\n<p><em>Cooking Method:<\/em><\/p>\n<ol>\n<li><strong>Preheat and Prepare:<\/strong> Preheat your Purely rimmed baking sheet in the oven at 425 degrees Fahrenheit. This method ensures a quick and perfect roast for your veggies.<\/li>\n<li><strong>Boil Pasta:<\/strong> While the oven preheats, bring a pot of salted water to a boil. Cook the pasta according to package instructions. Before draining, save about 1 cup of pasta water.<\/li>\n<li><strong>Prep Veggies:<\/strong> Snap off the tough ends of the asparagus, then toss them with a tablespoon of olive oil, salt, and pepper. Similarly, prepare the zucchini and yellow squash by slicing and seasoning them with olive oil, salt, and pepper.<\/li>\n<li><strong>Roast Veggies:<\/strong> Carefully place the seasoned asparagus, zucchini, and yellow squash onto the preheated Purely baking sheet. Roast for about 10 minutes until tender.<\/li>\n<li><strong>Make the Sauce:<\/strong> While the veggies roast and the pasta cooks, in a Purely skillet, saut\u00e9 onion and garlic until tender. Pour in the heavy cream, bring it to a boil, then reduce heat to simmer and cook until slightly thickened. Add Parmesan cheese, whisk to combine, and set aside.<\/li>\n<li><strong>Combine Ingredients:<\/strong> Once the veggies are roasted and the pasta is cooked, cut the asparagus into smaller pieces. Gently toss the pasta, roasted veggies, sauce, frozen peas, and parsley together in a large Purely mixing bowl.
